Yes yes I know pumpkins are everywhere these days- but let me add just one more “must” to your list this month. Pumpkin Spiced Lattes, Pumpkin Bread, Pumpkin Pancakes, Pumpkin Pie, Pumpkin Joe Joe’s, Pumpkin Soup, and now..Pumpkin Parfaits! Looking for a healthy way to get your Pumpkin fix this month!? Look no further! With Greek Yogurt, Pumpkin puree, granola, and pure maple syrup- this tasty breakfast treat is as good as it gets!

Ingredients:

-1 can of pumpkin puree

-1 carton of Greek Yogurt

-1 cup of granola

-2 TBS of Pure Maple Syrup

-1/4 Teaspoon of cinnamon

Directions:

1. Mix together cinnamon, granola, and maple syrup in a bowl until the granola is thoroughly coated.

2. In a mason jar or other container, layer Greek Yogurt and Pumpkin puree in alternating layers until you hit near the top of the jar (do not fill up all the way as we need to leave room for the granola!)

3. Top off with granola for a little crunch and added sweetness. Enjoy immediately or refrigerate and save for an on-the-go breakfast in the morning!

I don’t know about you, but when I walk down the aisles at the grocery store in October, all I wanna do is buy every Pumpkin flavored ice cream, cookie, cake, pie- you name it- off the shelves!
