The Prettiest Pitaya Bowls!

Yes, I know it’s fall and we “should” be posting about a Thanksgiving casserole or spiked cider, but can’t a girl break the mold every now and then and make a Barbie Breakfast in November!? Today’s recipe is just the prettiest Pitaya Bowl topped with tasty fruits, seeds, and granola! And while it looks like something you might find on a tropical island, you can make it right in your own kitchen! I was inspired to make my own Pitaya Bowls after I went to a smoothie shop this last week with my cousins and we were drooling over our (way-too-expensive) Pitaya Bowl that was absolutely delish. I’ve been seeing dragon fruit at the local grocery for weeks now, and they’ve been calling my name like nobody’s business! So, who cares that it’s PSL season, today it’s PBL season! (Pitaya Bowl Life)

***You can buy dragon fruit at your local grocery, farmer’s market, or health food store, and if they don’t have it there is always Pitaya Plus, an amazing pre-packaged frozen Pitaya mix for bowls, smoothies, and more! I was able to find this at my local Sprouts. ***

Benefits of Dragon Fruit: Dragon Fruit is high in fiber and low in calories- it will keep you fuller for longer than most other fruits! Dragon Fruit is also a great metabolism booster and is packed with antioxidants that help your body detox! 


Pitaya Ingredients:

-2 Pitaya packets, frozen (3.5 oz packets) OR 2 fresh dragon fruits, cubed & frozen

-1/2 cup of coconut water

-1/2 cup of frozen fruit (strawberries, bananas, or pineapple)

Toppings:

-Strawberries

-Bananas

-Kiwi

-Chia Seeds

-Granola

-Coconut Shreds

-Honey

-Agave

-Blueberries

-Starfruit

-Mango

-Pineapple

-Passion Fruit

Local Bee Pollen

-Blackberries

-Raspberries

Directions:

1. In a blender, blend together all of the “Pitaya Ingredients” listed above, and blend on a smoothie or ice cream setting of your blender (or until fully blended).

2. Put Pitaya blend in a bowl or large cup for an on-the-go breakfast or snack.

3. Top with sliced fruit, granola, seeds, and what ever else your little heart desires! 

I mean, come on, how pretty does this look!? Almost too pretty to eat!

Bikini Body Friendly 1 Ingredient Ice Cream!

I scream, you scream, we all scream for ice cream! Well let me tell you, you’ll definately be screaming YUM to this 1 ingredient, guilt-free, bikini body friendly, paleo, gluten-free, vegan, dairy-free, and overall DELICIOUS ice cream recipe! So what’s the secret single ingredient?! Bananas! Not only is this ice cream not bad for you, but it’s actually good for you! Bananas are loaded with potassium, vitamin B6, fiber, and more! Aside from being so healthy that you could eat the ice cream for breakfast (which I literally did this morning), it’s frickin’ tasty! The ice cream is great as-is, or you can make up your own flavors and variations like I did! This guilt-free ice cream recipe is perfect for indulging in dessert and still keeping that bikini bod in check for summer!

What You Need:

-2 Bananas (makes one serving, double triple or quadruple banana count for more ice cream!)

-Food Processor or Blender

-Extra add-ins for different flavors and variations if desired (see list below)

Directions:

1. Peel Bananas and freeze in Ziploc bag or sealed container overnight (until frozen solid)

2. In food processor or blender, put 2 frozen bananas in blender (along with any add-ins for flavors and variations), and blend on high or “ice cream” mode. My blender has an “ice cream” setting that blended for approximately 35 seconds.

3. Blend or process until smooth.

4. Eat immediately, or put in container and freeze for future enjoyment!

 Flavors I made:

1. Banana (basic recipe)

2. Coffee (basic recipe + 1 shot of espresso, childed)

3. Strawberry (basic recipe + 6 strawberries)

4. Blueberry (basic recipe + 1/2 cup of blueberries)

5. Green Tea (basic recipe + 1 scoop of matcha green tea powder)

6. Chocolate (basic recipe + 2 TBS coco powder + 1 TBS maple syrup)

From what I can tell from previews of The Bachelorette this season with Kaitlyn, there’s going to be quite some drama down the road, and all I can say is that I’ll be stress eating this ice cream every Monday night from here out to the Final Rose, I’m telling you!
