The Prettiest Pitaya Bowls!

Yes, I know it’s fall and we “should” be posting about a Thanksgiving casserole or spiked cider, but can’t a girl break the mold every now and then and make a Barbie Breakfast in November!? Today’s recipe is just the prettiest Pitaya Bowl topped with tasty fruits, seeds, and granola! And while it looks like something you might find on a tropical island, you can make it right in your own kitchen! I was inspired to make my own Pitaya Bowls after I went to a smoothie shop this last week with my cousins and we were drooling over our (way-too-expensive) Pitaya Bowl that was absolutely delish. I’ve been seeing dragon fruit at the local grocery for weeks now, and they’ve been calling my name like nobody’s business! So, who cares that it’s PSL season, today it’s PBL season! (Pitaya Bowl Life)

***You can buy dragon fruit at your local grocery, farmer’s market, or health food store, and if they don’t have it there is always Pitaya Plus, an amazing pre-packaged frozen Pitaya mix for bowls, smoothies, and more! I was able to find this at my local Sprouts. ***

Benefits of Dragon Fruit: Dragon Fruit is high in fiber and low in calories- it will keep you fuller for longer than most other fruits! Dragon Fruit is also a great metabolism booster and is packed with antioxidants that help your body detox! 


Pitaya Ingredients:

-2 Pitaya packets, frozen (3.5 oz packets) OR 2 fresh dragon fruits, cubed & frozen

-1/2 cup of coconut water

-1/2 cup of frozen fruit (strawberries, bananas, or pineapple)

Toppings:

-Strawberries

-Bananas

-Kiwi

-Chia Seeds

-Granola

-Coconut Shreds

-Honey

-Agave

-Blueberries

-Starfruit

-Mango

-Pineapple

-Passion Fruit

Local Bee Pollen

-Blackberries

-Raspberries

Directions:

1. In a blender, blend together all of the “Pitaya Ingredients” listed above, and blend on a smoothie or ice cream setting of your blender (or until fully blended).

2. Put Pitaya blend in a bowl or large cup for an on-the-go breakfast or snack.

3. Top with sliced fruit, granola, seeds, and what ever else your little heart desires! 

I mean, come on, how pretty does this look!? Almost too pretty to eat!

Homemade Hummus in 3 Fantastic Flavors

What can I say? I love hummus!  With pita bread, crackers, chips, veggies- everything! Don’t even get me started on all of the different flavors- so many delicious combos to choose from!  One day I realized, for how easy hummus is to make, I really spend way way too much money on it at the grocery store!  The other day I couldn’t decide between two flavors, so I got both (of course), and the total came to $9!  For hummus!  Making the hummus yourself only requires a can of chickpeas (99 cents), a lemon (35 cents), and some oils and spices that you probably already have in your pantry!  I figured, that if I made my own hummus every week for a year, instead of buying it at the store, I would save roughly $150 a year!  My conclusion: from now on, I am all about making my own hummus!  I tried three different flavors: Jalapeno and Cilantro Hummus, Garlic Hummus, and Roasted Red Pepper and Sriracha Hummus.

Jalapeno and Cilantro Hummus

What You Need:

-half of a large jalapeno

-cilantro to taste (I used about 1/4 of a cup)

-1 can of garbanzo beans/chickpeas (drain and use full can)

-1/4 cup olive oil

-1 tablespoon lemon juice

-1 teaspoon cumin

-blender or food processor

Directions:

1. After draining the can of garbanzo beans/chickpeas, put all of the ingredients into the food processor/blender.

2. Blend until thick and creamy.  My blender has an auto option for “dips/sauces”, so I used that feature to make my hummus. Serve immediately with pita bread, veggies, or crackers!

Garlic Hummus

What You Need:

-3 cloves of garlic

-1 can of garbanzo beans/chickpeas (drain and use full can)

-1/4 cup olive oil

-1 tablespoon lemon juice

-1 teaspoon cumin

-blender or food processor

Directions:

1. After draining the can of garbanzo beans/chickpeas, put all of the ingredients into the food processor/blender.

Roasted Red Pepper and Sriracha Hummus

What You Need:

-1/4 cup of chopped red pepper (mine was roasted, but fresh is delicious also)

-Sriracha to taste (as much as your taste buds can handle)

-1 can of garbanzo beans/chickpeas (drain and use full can)

-1/4 cup olive oil

-1 tablespoon lemon juice

-1 teaspoon cumin

-blender or food processor

Don’t stop here though!  You can add almost anything to hummus!  Here are some options that are on my hummus to-try list:

-Thyme and Basil Hummus

-Edamame Hummus

-Sweet Potato Hummus

-Coconut Curry Hummus

 

Try hummus in your sandwich, wrap, as a dip, or even on your bagel instead of cream cheese!  Hummus is rich in protein and fiber, can lower cholesterol, is high in antioxidants, and can even promote weight loss! So what are you waiting for? Try one of the above recipes, or even create your own!  We’d love to hear what fun combos you come up with!
