Sometimes you just want a simple and easy meal with no hassle – a literal “just add water” kind of situation. Cue, ramen noodles in a mason jar! Earlier this week, my roommate was saying how she eats instant ramen noodles from a package practically every day, out of sheer convenience of not needing to “cook”, and I got to thinking…there has to be a fresher and healthier way to do this yet still keeping the convenience of being able to be on-the-go and just adding the hot water for an instant meal for when you’re starting to feel hangry. Today’s recipe, Ramen Noodles in a Mason Jar, can be meal prepped ahead of time and taken on-the-go for instant eating when you’re ready- yet doesn’t sacrifice the fresh taste or quality that’s lacking in a pre-packaged bag of noodles! Umm I’m biased, but you definitely need to try this!!
-1/2 cup shredded chicken
-1/4 tsp soy sauce
-1/4 tsp Sriracha
-1/4 tsp lime juice
-1 chicken stock cube or 1/2 spoonful of chicken broth paste.
-Rice Sticks Noodles
-Add in: Shredded carrots, red peppers, cabbage, spinach, green onions, and whatever your little heart desires!
1. Start layering your mason jar with all of the ingredients, wet to dry. First start with the soy sauce, Sriracha, lime juice, and chicken stock on the bottom.
2. Follow with adding in the spinach leaves, shredded chicken, cabbage, carrots, red peppers, and green onions.
3. Finally, top with dry rice stick noodles and screw on the lid for on-the-go eating! Just take to work with you and fill 2/3 of the way with hot water come lunch time, and you’re set! Refrigerate overnight for an easy meal prep, or eat right away! Don’t forget to pack the chopsticks 😉
Want to know a little cheating trick?? If you want to get an assortment of veggies and chicken in smaller quantities, go to the salad bar at your local health food store and scoop out just as much as you need instead of buying a bag full of carrots or an entire bell pepper – you can get just the small amount you need, fresh and ready to go, for prepping a meal just like this!
You’ll never go near a package of instant ramen noodles again after having this healthier, fresher, gourmet-er version! And yes I did use purple cabbage and yes it did dye my noodles a lovely lavender purple.. because you’re never too old to play with your food 😉
