Health is so important to each and every one of us Girlbosses because- whelp in order to take over the world we gotta have enough energy to do so! We were so excited to see all your comments and feedback about our first, Healthy Girl On-The-Go post and we loved working on a second edition after requests from all of YOU! We know that all of us Darlings Girls are always striving to make the most of EVERY day and that in itself entails a pretty dang busy lifestyle. And we understand the struggle to balance a busy and healthy lifestyle but we also KNOW it’s totally POSSIBLE!
So we have put together five NEW lunch posts to add some variety in your lunch/snack packing skills because we all know that we also believe that you should thoroughly ENJOY every meal that you eat and yes, even the HEALTHY stuff π We stuck with the fundamentals of fruit, veggies, protein, and gluten free (not to mention ALMOST 100% paleo)
Health Lunch Option 1
Lets just face it- lettuce wraps are just so pretty & dainty. We vote them as the new sandwich FOR SURE. This combo for the paleo tuna can be made with shredded chicken as well for a chicken salad instead of a tuna salad π
Paleo Tuna (or chicken) Salad:
1 avocado
1 can of tuna
salt & pepper
garlic salt
1/2 lemon, juiced
Now, just mix everything up! Easy as that and lasts in the fridge for a couple days so you can use for multiple meals. We love adding some hot sauce as well π
For the rest of your meal; throw in a fresh banana, carrots & hummus, and some kale chips!
**We know just how expensive store bought kale chips can be- so here is a great recipe to make giant batches of your own in about 15 minutes!**
Kale Chips:
1 batch of kale
4 tablespoons of olive oil
1 tsp red chili flakes
1 tablespoon garlic powder
1/2 lemon, juiced
salt and pepper to taste
After you have washed and dried your kale, remove the stems. Preheat the oven to 380 degrees and then in a large bowl put in all ingredients and mix with hands until kale is all evenly seasoned. Bake for about ten minutes, let cool for five!
Just a warning, these guys don’t last long! I always make a couple batches at once so I am not worried about it. Just store in a Tuppawear!
Health Lunch Option 2
If you are a sucker for some PB&J when you just want a good comfort food for lunch this is a GREAT and just as tasty alternative!
Slice your apple into pieces that can be used as the “bread” spread some nut butter, fruit preserves (low in sugar and carbs), and sprinkle some fresh gluten free granola (Kind has an amazing selection of granolas that are so good).
We thought this was a great pair with some Chocolate coconut Water because we felt like we were getting this giant Pb&J sandwich and some chocolate milk, yeah- it is heavenly. Then for some added protein threw in a hard boiled egg, carrots, and snap peas for a nice crunchy snack.
Health Lunch Option 3
Isn’t sparkling mineral water so classy?? haha we kinda love it not just for the refreshing taste but for nice variety to throw into just plain water all the time! This meal we threw in a bunch of great veggies like; celery, carrots, cucumbers, and some turkey role ups! And of course some hummus on the side.
For extra little crunchies we threw in some kale chips and then for protein and dessert, we made a little fruit parfait- some yogurt, berries, and a little bit of granola!
Health Lunch Option Four
Mason Jar salads are kinda the business right now, and we are loving it- I mean imagine how awesome you would look walking into work reppin a MASON JAR SALAD? yeah, super chic! But there is a technique to this salad so it stays fresh and ready to go!
We went with a taco salad theme- so dressing goes in first, followed by hard veggies like peppers, then soft veggies like; corn, black beans, tomatoes, and avocado, then top it off with lettuce of your choice!!
We paired this amazing salad with some sweet potato chips, mineral water, and banana for dessert. Too good to be true!
Health Lunch Option Five
Deviled eggs are kinda amazing, I mean just the thought of having them packed for lunch makes me feel like I have a party appetizer in my lunch tote- and that is just fab. We put together a Paleo Deviled Egg recipe, which is as follows;
Paleo Deviled Egg
6 hard boiled eggs
1/2 of their egg yolks (toss the rest)
1 tsp of mustard
1 avocado
1/2 lemon, juiced
paprika (to garnish)
Basically, just mix it all up and stuff your egg whites! They are too good!
For the rest of this lunch we added a bed of spinach with some turkey, raw fresh squeezed apple juice, carrots, cucumbers, fruit w/ carob chips for dessert, and some sweet potato chips for a little salty snack. This combo is the perfect thing to get you out of your lunch rut!
Darlings, we are all about finding ways to make the smallest details in life exciting- I mean not that food is a minor detail or anything but still our packed lunches should be FABULOUS and healthy! Because food is fuel and us girl bosses gotta have energy to take over the world, am I right?!

I’m really excited to find these posts. I am very over weight but have recently started a lifestyle change and including healthy foods and exercise. I am very sensitive to carbs so I have decided to go low carb and these ideas are perfect! I have the breakfast and dinner thing down.. But lunches are so hard and these ideas are perfect!!

I love all of your lunch ideas! Do you have any breakfast or dinner ideas as well? Also, can you post your sweet potato chips recipe, I’ve never had them never had hummus either and im hesitant to try it im obviously new to the healthy eating gang, but I am excited to start and go shopping very soon.

yay for starting your healthy girl on the go journey! It really is a lot of fun- we promise π haha
So we actually get the tarro brand of sweet potato cups because the only added stuff they have in them is olive oil and a little bit of sea salt.
And we recommend trying out some local hummus- they are usually the most fresh and tastiest. I get a local jalaepeno hummus that is to die for- just ask around where you live to see what brands are the best!!

What kind of dressing do you use with the taco salad in the jar?
Hey love! Actually I usually just put a little salsa as dressing π that mixed with the avocado is a perf combo and healthy π
These are all super awesome and inspiring ideas. I am a graduate student so I find myself forgetting to sit down and eat or snagging a poptart instead of a real meal. Unfortunately I find that a lot of recipes use tuna and I am allergic to shellfish and most seafood. Is there any substitute that can offer me the same health benefits? Again, very inspiring and helpful to the perpetual student!

Way to be a #girlboss and kill it in Grad school- we are totally inspired by YOU! and yes, girl we totally know how crazy it it being a student trying to find time to eat REAL food- so be sure to make the time by meal prepping- your body will thank you! be sure to check out our other post in our health sections as well just for more ideas!
But as a replacement for tuna- girl there are so so many! I love making a bunch of chicken at the start of the week and seasoning it really yummy with like lime and cayenne pepper and then just topping my salads, wraps, and veggies with that!
Or making things like black bean salads for extra protein! Just be sure to find protein that you enjoy
and if you are wanting to do those tuna recipes you can always replace it with shredded chicken or turkey!

We are pumped you like our blog- we have fun with it and always hope our readers have fun reading it π The sweet potato chips are amaze there are a ton of great brands just make sure the ingredients are limited to sweet potatoe, olive oil (or coconut oil), and some sea salt! What size mason jar are you using for salads?
Hey love! SO we use between 8-12 ounce mason jars depending on if I am adding like a quinoa to it I do the 8 ox if mostly leafy greens then the 12 π

Hi Ladies!!Thank you so much for the healthy ideas! I’m not overweight but I’m not in shape and I eat too many processed foods.
I tried your lunches from the first blog and after lunch I felt like I had more energy. These meals boost your metabolism instead of making you sloppy and sleepy after a burger and fries for lunch.
Also I was told I needed a gallbladder surgery, and after doing some research I tried your lunches and snacks throughout the day as several small meals and I’m 100% better. It’s been 6 months since my side and stomach pain that would keep me in bed for a couple days went completely away. I totally believe that eating the wrong things can make you sick.
I use line caught Wild Planet tuna in my tuna salad as it’s environmentally friendly and it’s only ingredients are tuna, sea salt and water.

I love this, so excited to try! I’ve been clean eating for about a month 1/2 and I’m down 20 pounds! I just wanted to know where you find the raw apple juice, as well as what other drink options are truly healthy besids water, because that is all I drink right now and its getting a little boring!
