Have you ever wondered what all of the most amazing & tasty foods would taste like all together in one place?! Well this flatbread is it! Topped with figs, arugula, Caramelized onions, goat cheese, and prosciutto, this flatbread is simply to die for! Plus, it’s so easy to whip up yet so impressive to be served! Perfect for a dinner party with the girls, at home date night with the boo, or- heck- all for yourself and your bottle of Cab! (Really though, Cabernet goes great with figs, I totally suggest it). Anyways, here, my lovelies, is your next cooking endeavor…
-1 pre-made Flatbread (okay okay you caught me I cheated- but hey I needed more time to be out there girl bossin it up, so I enlisted some help!)
-3 ripe fresh figs
-4 slices of prosciutto
-1 package of crumbled goat cheese
-1 TBSP olive oil
-1/3 of an onion
-2 cups fresh arugula
-balsamic vinegar reduction to taste
1. Let’s start with the Caramelized onions and get those going before you prep everything else- cut up onions into thin slices and add to pan with 2 TBSP cooking oil & butter to keep it from burning and instead turning into that tasty Caramelized state. Cook on medium.
2. When the onions look like they are on the verge of burning, add half a cup of cold water to the pan to help cool them down and for the onions to absorb and continue cooking. When the onions are getting to a nice caramelized state, take them off heat and let cool.
3. Next, prep figs and slice into thin pieces. Spread the olive oil onto the pre-made flatbread and then evenly spread Caramelized onions, goat cheese, and figs onto the flatbread. Cook in oven or toaster oven on 350 for approximately 15-20 minutes or until goat cheese looks melted and the crust looks slightly browned.
4. Take flatbread out of the oven and add Slices of prosciutto, handfuls of arugula, and drizzle balsamic vinegar. Eat immediately, or you’ll most certainly have FOMO 😉
